Cinnamon and Almond Chia pudding

Almond butter is my new favorite ingredient, at least one of them. I think there is only one person in our household who loves it more than me. – My 4-year-old daughter. She loves it so much and can eat it how I would eat nutella when I was a kid. When it comes to smoothies there is (almost) always room for almond butter, especially if you are listening to my daughter. So this Cinnamon and Almond Chia pudding will probably also become one of her favorite when she dares to taste the chia pudding 🙂

Almonds are great for both your body and your brain. There is really a good reason Almond is called brain food. –so in other words much better than the nutella – wink wink

Almonds are natural source of magnesium, riboflavin, L-carnitine, vitamin E and are also full of antioxidants.

Now, let´s come back to the Cinnamon and Almond Chia Pudding. I have always preferred the more fruity tastes when it comes to breakfasts or afternoon snacks, feeling that playing with these tastes would be heavy. So combining these ingredients are pretty new to me. The first time I made it was because I craved Raw cacao nibs, And I can tell you I was in for a nice surprise. The Cinnamon and Almond chia pudding is SO tasty, that you can have it both as your breakfast but also as a treat or the after dinner cake if you want 🙂

Cinnamon and Almond Chia pudding

Course Breakfast, Snack
Servings 1 person

Ingredients

  • 2 tbsp Chia seeds
  • 1 tsp Cinnamon
  • 1 tsp cardamom optional
  • 1 dash raw vanilla powder
  • 1 dash honey or agarve sirap optional
  • 1,5 decilitre Almond Milk appx. 1/2 cup

Suggested Toppings

  • Banana slices
  • Almonds
  • Almond butter
  • Raw cocoa nibs
  • Shredded coconut

Instructions

  1. Mix the main ingredients and pur it into a jar with an ait´r tight lid and leave overnight.
    In
    the morning add your prefered topping

Chia pudding is also one of my favorite breakfast at the moment. why? It´s packed with ingredients that work wonders for my body and my mood and It leaves me full of energy and ready for the day.
