Healthy and Easy Lunch Box Salad

Today I want to share a recipe for a lovely, Easy and Healthy Lunch Box Salad. Cabbage is tasty. Cabbage is beautiful and Cabbage is healthy. 

I have sometimes found it difficult to stay healthy during long working days and often I have forgotten to bring lunch with me – resulting in sudden blood sugar drops, and far to many falafels or expensive cafe lunches. One of the things that I have promised myself for a more balanced future is to become better in and learn enjoy to prepare food for the road. Lunch and snacks. I´m slowly getting there and I´m really learning to enjoy preparing healthy food for the road.

This one serves 4 or you can save it in the fridge up to 5 days and bring it with you several days in a row, but with different toppings.


  • 500g Pointed cabbage
  • 3-4 Carrots
  • 2 big Beetroots
  • 1 Red Onion
  • a handful fresh herbs (I used thyme and mint leaves)



  • 0,5 dl Apple-cider vinegar
  • 0,5 dl olive oil
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey (preferbly organic and unheated)


Grate the cabbage, carrots, beetroots and onion in a food processor or a salad maker or chop them more rough if you prefer that. Mix the ingredients for the dressing in a glass or a shaker and pour over the salad. Add your desired topping and serve.


Suggested topping: 

In this version I topped the Salad with:

  • Chick peas
  • Feta cheese
  • a few slices Apples
  • Sunflower seeds

You can basically top your salad with whatever you like. Why not mix a delicious piece of smoked salmon with avocado and linseeds or your favorite piece of meet with apple and spinach. Only your fantasy and tastebuds sets the limit.
