Summer is here. With summer comes ice cream season off course! Today I want to re-post and share the best and the easiest Nice cream recipe Blueberry Nice Cream.
I posted this last year too, but it´s too good that it deserves a re-post 🙂
For me it´s easy to get carried away eating ice creams every single day. Eating normal ice cream everyday during the summer is something that I would like to refrain from. Not only because of the extra kilos that potentially could bring along. But, because of the sugar and the additives. I think we all know that sugar is not good for us, but that could be something for another blog post in the future.
With summer also comes berry season. And here in Sweden there will soon be blueberries everywhere.
Blueberry Nice cream is just about as easy as it gets. It´s made from very few ingredients. It contains no sugar or dairy products and you don´t even need an ice cream machine. It tastes so good that even the kids will love it.
- 100 g. blueberries
- 150g. naturel cashew nuts (soaked for at least 8 hours)
- 8-10 fresh dates (pitted)
- 1 deciliter coconut cream
- 1 pinch of pure vanilla powder
- a dash of agave sirup or honey if you like it a little sweeter.
The night before, or at least 8 hours, before you want to make the ice cream soak the cashew nuts in water.
bring all the ingredients in a blender or use a hand blender.
Put the nice cream in smaller containers and put in the freezer.
