Today I had finished and was ready to publish the first out of three articles digging into the anatomy of my Burnout. However a few weeks ago I made an interview with the local newspaper Sydsvenskan about my Burnout and my way back to life through MediYoga (among others). Today this interview got published, so I will publish my article a bit later on this week – Enough is enough 🙂 You can read the interview right here
Instead, I will share a lovely snack recipe Cocoa Energy Bites. You can find Cocoa Energy Bites in many different variations and shapes around the internet. This is a simple version that´s easy to play with. Why not try to add licorice powder or maybe Bee-pollen.
Cocoa Energy bites is an easy way to support your energy-levels throughout the day. When you make them, make sure to make enough so that you can keep a stash in your fridge. Snacks for grabs – Cocoa Energy Bites.
Ingredients:
appx. 12 Cocoa Energy Bites
- 2. dl Organic Almonds
- 2 dl. shredded coconut
- 10 dates
- 2,5 tablespoons of nutbutter of your choice (I used almond)
- 4,5 tablespoons of Organic Raw cacao powder
- 1,5 tablespoons of Coconut oil
- 1 pinch of Raw vanilla powder
- a dash of honey
How to:
Place the Almonds and 1 dl. (save the other 1. dl for later) of Shredded coconuts in a food processor and mix it untill it´s nicely crushed – almost like flour.
Add the dates one by one so you get a nice batter, then add the coconut oil, the vanilla powder and the honey
Roll the batter into smaller balls and roll them in the rest of the shredded coconut
Put the Cocoa Energy Bites in an airtight container and store them in the fridge.
Enjoy 🙂

These look so good, though I’m not a fan of coconut. I should try making these & having them on hand during the day since I work from home.
Minus the shredded coconut, I want these. Now that I’ve got the recipe, time to try them. Thanks for sharing.
