There are several ways to make porridge and last year I most often made a wonderful overnight porridge, however I would also sometimes forget to get started the evening before, and then this one is awesome. As a matter of fact my boyfriend prefers this one to the other.
We´ve allways made our porridge the good old way where you boil and stir the ingredients together – and there is absolutely nothing wrong with this. Recently I found that boiling the water before adding the ingredients preserves the texture much better. Try it out and you will notice the difference.
2 small or one big portion
- 3 dl. Water
- 1,5 dl Rolled oats of your choice – I prefer the oats that are either from Rye or have a stronger texture.
- 2 tablespoons linseeds
- 0,5 tablespoon chia seeds
- 1 teaspoon cinnamon
- 1 tablespoon coconut oil
- pinch of raw vanilla powder
- Shredded coconut
- Honey (preferably the running kind)
Bring the water to boil in a small pan and turn down the heat to pretty low (I put my stew on 2)
Add all the ingredients and stir very carefully to mix. Leave it on the stew for 2-3 minutes, depending how dense you like your porridge. Stir the porridge as little as possible to not disturb the texture too much. The low temperature and the coconut oil helps the porridge not to stick too much to the pan.
Set the porridge aside while you prepare you favorite topping.
