I hope you have had a wonderful weekend. I have been so lucky to have one of my very best friends from college times visiting and the opportunity to spend time both with her and our tight group of roomies from that time. We realised that it will soon be 20 years ago since we met in college. I am so grateful to still have these beautiful people in my life <3
Here in Scandinavia it feels like the summer is slowly fading into pre-autumn. It´s still warm outside, but there is something changeable in the air. As always this comes way to early for most people, including myself, but there is also something really beautiful and symbolic about the changing weather. An old chapter is about to end, and a new one is about to begin.
Todays recipe can be enjoyed boy´th cold and warm and will be a tasty treat for any day 🙂 Delicious and healthy berry Pie full of the last bunch of tasty berries, and that can be served both warm and cold.
This pie is so easy and quick to make, that if you have the ingredients, there is really no excuse to not get a great afternoon sweet or a delicious dessert.
If you want the pie to be gluten-free just swap the rolled oats to either quinoa flakes or ordinary gluten-free oats.
In this version I used raspberries and blueberries, but you can use your favorite berries and fruit.

Delicious and Healthy Berry pie
If you want the pie to be gluten-free just swap the rolled oats to either quinoa flakes or ordinary gluten-free oats.
In this version I used raspberries and blueberries, but you can use your favorite berries and fruit.
Ingredients
- 200 grams Raspberries 2 big handfuls
- 200 grams Blueberries
- 1 apple
- 1 tsp Raw ground vanilla
- 1/2 juice of 1/2 a lemon
- 2 tbsp Maple Syrup
Crumble
- 15 fresh pitted soft dates
- 110 grams Buckwheat Oats
- 110 grams rolled oats i used spelt
- 1 pinch salt
- 5-6 tbsp Coconut oil
plus more to grease the baking dish
Instructions

Turn on the owen on 175 C, and grease a medium baking dish with coconut oil.

Rinse all the berries

Cut the apple into smaller bits and discard the seeds.

put the berries and the apple in the baking dish and add lemon juice, the maple syrup and the ground vanilla

Make the crumble starting with the dry ingredients. Add the pitted and chopped dates and the coconut oil and mix with your hand until the crumble have a good texture.

Pour the crumble evenly over the berries.

Bake fr appx. 30 minutes until the crumble has a great light brown colour and the juice is bubbeling around the edges.
